Primal Snacks for the Super Bowl

A few Super Bowl paleo/primal friendly snacks

It's Super Bowl time again!  This year we decided to deep fry pretty much everything... even guacamole, while still keeping it "Paleo", hah.

Check it out.  A ton of time was put into developing these recipes!  Enjoy.

My recommendation is invest in a really good deep fryer: one that can get super hot (at least 375F), is stainless steel, and has an oil filter.  The cheap ones just don't get hot enough.  I like this one... it's a little pricey but so worth it.  

If you plan on making everything below, I suggest cooking them in this order: sweet potato fries, chicken wings, and then guacamole.  For the frying oil, use safflower oil.  For my 3.3L deep fryer, I used almost 32oz of oil.  Sorry folks, melted coconut oil isn't going to make the cut.

Deep Fried Guacamole: lulz.
  • Guacamole
  • 3/4 cup Blanched Almond Flour
  • 2 Eggs
  • 1/4 cup Coconut Flour
  • Salt and Pepper
Make guacamole... the consistency of the batter should be just enough to hold its shape, but not super thick.  Cover a baking pan with wax paper and place guacamole on top.  Create a 1" high rectangular block.  Freeze 4-5 hours in advance (or until it's pretty solid).  With a whisk, mix the almond flour, eggs, salt and pepper in a shallow mixing bowl.  Put the coconut flour in another shallow mixing bowl or place.  Take the frozen guacamole out of the freezer and cut it into bite-sized pieces.  Lightly cover with coconut flour and then with the almond flour mix.  Freeze until ready to fry.  In the deep fryer, heat the oil to 360F.  Fry uncovered until golden brown.

Spicy Fried Buffalo Wings: awesome with the blue cheese sauce below.
  • 2lb Chicken Wings (organic, free-range, you get it), cut in half at the joint
  • 2 tsp Paprika
  • 2 tsp Cayanne
  • 1 tsp Sea Salt
  • 3 Tbsp Butter (again, organic, grass-fed, etc... I like the Kerrygold brand--unsalted)
  • 1/2 tsp Garlic Powder
  • 1/2 tsp Onion Powder
  • 1-1.5 cup Hot Sauce, depending on how spicy you want it (I used the Pepper Plant brand)
Pat the chicken wings down dry.  Combine cayenne, paprika, sea salt, and chicken wings in a mixing bowl.  Coat the wings evenly and let it sit for at least 30min.  Meanwhile, melt the butter in a pan over medium heat.  Add the garlic powder, onion powder, and the hot sauce.  Cook sauce until thick.  In the deep fryer, heat the oil to 375F.  Put the chicken in and fry uncovered until golden brown (~8-10min).  Move to mixing bowl when done and immediately put the sauce over it.  Serve with blue cheese dressing below.

3. Spicy Fried Buffalo Wings


Blue Cheese Dipping Sauce: awesome with the spicy buffalo wings above.  maybe not so Paleo, but Primal.
  • 3 cloves Garlic, minced
  • 1/2 cup fresh Chives, chopped
  • 1/4 cup fresh Parsley, chopped
  • 4oz Blue Cheese (raw)
  • Juice of 1/2 a lemon
  • 3/4 cup Sour Cream
  • 1/4 cup Mayonnaise
  • Salt and Pepper
Combine all ingredients a food processor.  Mix well.  Serve with fried chicken above.


5. Blue Cheese Sauce for wings.

Truffle Parmesan Sweet Potato Fries: because who doesn't love fries?  This was a major hit.
  • 3 medium-sized Sweet Potatoes, cut very thin with a Mandoline slicer
  • 6-8 cloves of Garlic, minced
  • 3 Tbsp fresh Parsley, chopped
  • 1/2 Tsp Black Truffle Salt
  • Black Pepper
  • Parmesan Cheese, freshly grated
Soak thinly sliced sweet potato in water for at least an hour.  If you don't have an hour, rinse at least 5 times, or until the water is clear.  Strain and dry the crap out it.  In a mixing bowl, mix the garlic, parsley, truffle salt, black pepper and freshly grated Parmesan.  Set aside.  Before cooking the shoe strings, layer the bottom of a large mixing bowl with paper towels.  In the deep fryer, heat the oil to 325F.  All deep frying to be done uncovered!  For the first fry, fry for ~3-4 min until cooked but not browned (until they have some sort of shape).  Dump into the mixing bowl and let it rest for ~15min.  Heat the oil to 375F.  Cook for at most a minute.  Salt immediately.  Then cover fries with Truffle-Garlic-Parmesan mix.

6. Garlic-y Truffle Parmesan Sweet Potato Fries


Stuffed Mushrooms: thought about deep frying this... good thing we didn't haha.
  • 1 pack of Portobella/White/Crimini Mushrooms (8oz), stems removed
  • 0.5lb Spicy Italian Pork Sausage, de-cased
  • 1/4 Shallot, finely chopped
  • 1 Tbsp fresh Basil, chopped
  • Parmesan Cheese, grated on top
Preheat oven to 325F.  Cook the de-cased sausage and the shallot together until fully cooked.  Stuff the mushrooms with the meat.  Put the fresh basil on top and grate the Parmesan cheese over it.  Cook in the oven for 40-45 minutes.

4. Stuffed Mushrooms.


Mozzarella, Basil, and Tomato Bites: super simple.  
  • Fresh Mozzarella Balls
  • Fresh Basil leaves
  • Cherry Tomatoes
  • Black Pepper
  • High quality Olive Oil
  • Toothpicks
Use a toothpick to connect mozzarella, basil leaf, and cherry tomato.  Sprinkle with black pepper.  Drizzle with olive oil.
